「包丁キャンセル」から考える、毎日の台所と道具の選び方

Considering Your Daily Kitchen and Choice of Tools, Starting from the "Knife Cancel"

浅郷剛志

Recently, I came across the term "knife cancellation."

This refers to efforts to reduce the burden of cooking by using pre-cut ingredients or kitchen scissors, without using a kitchen knife or cutting board.

On days when you're tired from work or housework.

On days when you don't have time to cook.

On days when you want to reduce even one dish to wash.

I believe it's a very natural choice to incorporate convenient ingredients and tools on such days.

You don't have to cook properly every day.

You don't have to take out a knife and cutting board every time.

There are no such rules.

Choosing a method that suits your time and mood for the day is also an important way to keep meals going without overexertion.

It's okay to have days when you don't use a knife

Cooking involves many steps: planning the menu, preparing ingredients, cooking, and cleaning up.

Doing that every day is by no means easy.

So, it's okay to have days when you don't push yourself to cook.

It's okay to have days when you don't use a knife.

Somaé's goal is not a kitchen where only labor-intensive cooking is considered the right way.

We believe that both days of relying on convenient things and days of enjoying cooking with your own hands are part of one's unique lifestyle.

Reducing the burden of using tools

On the other hand, there are times when you just want to cut a little bit of food.

Cutting fruit for breakfast.

Cutting a small amount of vegetables for a bento box.

Chopping herbs.

Preparing ingredients for dinner.

But it's not enough to warrant taking out a large knife.

Considering the cleanup afterward, it feels a bit troublesome.

The reason for not using a knife is not necessarily because you dislike cooking.

You might just feel a slight burden in taking out, using, and putting away the tools.

That's why Somaé doesn't recommend using a knife, but rather wants to deliver tools that you naturally reach for when you want to use them.

Between "using" and "not using"

To use a knife or not to use one at all?

Those aren't the only two options.

If you just need to cut a little, use a small, light knife.

On days when you want to fully enjoy cooking, choose your favorite one.

I believe it's fine to switch tools depending on the day's cooking and your mood.

Somaé's small knife "corebacca" was born from this idea.

A minimalist knife that you naturally reach for during everyday small cooking tasks.

It's not a substitute for a large knife, but rather a knife you can easily pick up for small daily cooking tasks.

Even though it's small, it's easy to push-cut and can be widely used for everyday cooking, including not only fruits and herbs but also meat and vegetables.

By slightly reducing the burden of using a knife, cooking time becomes lighter.

That's what we believe.

The time spent using tools is also part of life

It is important to prepare meals efficiently.

On the other hand, there's a joy that cannot be measured by efficiency alone in the time spent touching ingredients, cutting them by hand, and watching the food gradually come together.

The sound of cutting vegetables.

The feel of touching a wooden handle.

The time spent sharing a meal with someone.

Tools are not just for getting tasks done.

They can also lift your spirits a little when you pick them up, turning your usual kitchen into a place where you can move your hands in your own way.

That's why Somaé values not only ease of use but also the appearance and feel of wood, and how affection grows with continued use.

Sharpening when the blade dulls, repairing damaged parts through consultation.

Using them for a long time, adapting to your lifestyle.

"Knife cancellation" is not a rejection of knives, but rather an expression of how people have become free to choose their cooking methods according to their daily lives.

On busy days, don't use a knife.

On days when you only need to cut a little, pick up a small knife.

On days when you have time, enjoy cooking at a leisurely pace.

All of these are ways to have your own unique kitchen.

It's okay to have days when you don't use a knife.

But on days when you want to use one, there are tools that you can comfortably pick up.

Somaé will continue to provide tools that effortlessly complement daily cooking and lift your spirits a little each time you use them.
